Ich habe sie vor ungefähr einer Woche wiederholt und jetzt wiling die Blätter und fallen ab. Was mache ich falsch? Habe ich über Wasser oder ist der Topf zu klein?
The soil needs some grit. Also, does the pot have holes at all?

What type of compost you use to repot it with? Citrus trees prefer slightly acidic pH soil, so it’s best to use a potting mix designed specifically for citrus (or described as ericaceous).
Also the compost should be well draining, so adding some perlite and orchid bark to the mix can help prevent it becoming waterlogged.
But also looking at the leaves, it could be suffering from some sort of pest infestation, that lower leaf looks like it had a load of white specks down the central vein, possibly spider mites? I would spray the plant with a pesticide just in case.

Yikes that soil looks like mud.
Needs aeration. I bet you have root rot.

Lemons need full sun to thrive, try giving it some light?

As others have said, that soil is no good. You need to take action quick, you may already have root rot. I’d rip it out right now, rinse the roots, and see what you have. Cut off any black, slimy, or smelly roots.
Don’t miss any rot. If you have to butcher the roots, do it. You can always defoliate and just leave a single or two leaves to keep it alive. But if you don’t dry it out and stop the rot you’re gonna lose this 100%, no doubt.
It’ll do fine in cactus or citrus soil. I would give it a few days off from watering after repotting – at least two, longer if the leaves don’t wilt. Then just a quick water, don’t flood it. I’d water sparingly for a few weeks, try to bring it back.
