I had domestic rabbits a while back and at the end of the season I’d cut down full stalks of sunflowers for them to eat. They’d eat the whole flower (including the petals), seeds, leaves, and leaf stalks. They’d leave the woody stalk, so your flowers should survive, providing they don’t find a way to push them over!
