As it’s a brassica the whole plant is edible so you could harvest it from when it germinates. Because they are overcrowded they don’t have room to swell and look like a pak choi like from a market, but try take all but one out to give one a chance.
I’d eat them now – once they’ve started to flower they won’t grow into a typical pak choi. The shoots with flower buds are nice at this stage though, good in a salad.
