I normally wait until they have true leaves to separate them.
Carrots I would recommend you sow directly where they are to grow, they don’t like their roots disturbed. You can fill a deep tub with sharp sand and sieved garden soil to grow them, they don’t want rich compost.
What I’d do (bearing in mind I’ve only been doing this three years or so) is thin them down to two or three healthy, well spaced out seedlings per pot (keeping the spares in case some die or look weak) and let them continue to grow in there until they’ve got more leaves and are starting to look like they are outgrowing the containment. Then pot on or plant outside.
Carrot should really be sown directly where you want them. They have a habit of forking if transplanted. You might get away with it when they are very young.
Tomatoes I wait until they are at least 15cm tall and usually more like 30cm. They only go outside when there’s zero chance of frost overnight.
Rocket is tough.
I think the last one says strawberries. They are a tough plant, considering they produce a delicate fruit. The birds usually get all my fruit, the plant will grow anywhere.
