Yes it’s fine to cut tendrils off, but celery grows quite slowly and pumpkins grow so quickly, it’s going to block out any light your celery seedlings get and stunt them.
It may be worth creating a little bamboo cane support structure around the pumpkin and training it to grow up that to avoid swamping the adjacent veggies.
