Oh yes, dry it, worth the time and effort. I slice them then dry them, although it is probably better to dry them whole. I just don’t have a real dehydrator and in my humid weather, I have to dry it fast or it goes bad.
Do you grow them in the ground or containers?

How long did this take? Last summer I planted some and was disappointed when I pulled them out in the winter, thought maybe I started too late, This is how far my plants are now

Look at pickling turmeric. It’s a common condiment in India that is eaten with a meal. You simply put peeled thinly sliced turmeric in a jar with lemon and salt iirc.
